Canadian Foods [Smoked Salmon, Tartar Style]

Smoked Canadian salmon
½ lb.
250 g
 
Mayonnaise
 
 
 
Egg yolk
1
 
 
Mustard
2 teaspoons
 
10 ml
Olive oil
2/5 cup
 
100 ml
Lemon
1/2
 
 
Worcestershire
sauce a few drops
 
 
Tabasco
a few drops
 
 
Capers, chopped
1/4 cup
50 g
60 ml
Shallots, chopped
1/4 cup
40 g
65 ml
Chives, chopped
1 sprig
 
 
Parsley, chopped
1/4 sprig
 
 
Salt and pepper
to taste
 
 
To Garnish:
 
 
 
Cucumber
1/2
 
 

 
Place the egg yolk, mustard, lemon juice, Tabasco and Worcestershire sauce in a bowl and whisk.
Slowly blend these ingredients with the olive oil to make a mayonnaise.
Chop all remaining ingredients and place them in a bowl.
Combine with the mayonnaise.
Taste for seasoning.
Cut the cucumber into strips.
Serve on a toasted baguette and garnish with a strip of cucumber.
Makes 2 to 4 servings
